{ Crab Stuffed Mushrooms }

Source: Nancy Ruddy

Nancy writes: "I have been making these for years and years and everyone requests that I bring them when ever we do a get together. The recipe is something I sort of figured out myself after trying several different versions."

Ingredients

16 large white mushrooms, stems removed
1/2 pkg of chunk crab mix
mushroom stems
1 cup grated old cheddar or to taste
1 tsp garlic powder or to taste
1/3 to 1/2 cup bread crumbs
1/4 cup melted margarine

1. Finely chop (or put thru food processor until fine) crab mix and mushroom stems.

2. Mix garlic, cheese, bread crumbs and melted margarine. Mixture should be sticky.

3. Roll the stuffing into balls and place into the mushroom caps in a heavy baking dish.

4. Bake at 350 until golden and mushrooms are soft, usually 30 minutes.

These can be prepared early in the day and baked at the appropriate time.

I often double the stuffing and in a corner of the baking dish or under some of the mushrooms put just the stuffing mixture and bake it with the mushrooms then serve the stuffing garnished with a little grated cheese with crackers for those who do not like mushrooms.
