{ Never Fail Chicken Divan }
Makes 4 servings Source: Noreen Forde (thanks to Heather Davis) Just a thought: Heather (my big sister) writes: "This is originally Noreen's recipe but I make it so often I would like to think that it was mine. It's simple and delicious!!" Ingredients: 2-10 oz packages of frozen broccoli spears, cooked and cut into bite-sized pieces. Don?t use fresh as it can be bitter in this recipe. 4 whole chicken breasts, sautéed 2 cans cream of chicken condensed soup 1 cup mayonnaise 1 tsp lemon juice 2 tbsp sherry or white wine (sherry tastes better if you have it) 1 cup bread crumbs 1 cup grated cheddar cheese 1 tbsp melted butter of margarine *Do not skip or substitute any of the parts. The recipe is very balanced and does not respond well to substitutes. 1. Place cooked broccoli in dish and cover with cooked chicken. 2. Mix soup, mayo, lemon juice and sherry; pour over chicken. (At this point you can freeze if desired. When ready to serve, remove from freezer and allow to thaw - be careful about microwave thawing as it can make the chicken tough) 3. Place in 350 degree oven for 30 minutes. 4. Mix bread crumbs and cheese; sprinkle over top. 5. Pour melted marg/butter over crumb mixture, return to oven 10 min for browning. Inexpensive and quick, but tastes gourmet! |
