{ Island Pork Tenderloin }

Sandi writes: "This recipe came from the daughter of my best friend.  She lives in Calgary and found it on the Internet, I don't know where.  It is terrific and easy!  Always wows the guests."
 

Ingredients:

For the pork:
2 tsp salt
½ tsp black pepper
1 tsp ground cumin
1 tsp chili powder
1 tsp cinnamon
2 pork tenderloins (2 ¼ to 2 ½ lb total)
2 tbsp Olive Oil

For the glaze:
1 cup packed brown sugar
2 tbsp finely chopped garlic
1 tbsp tabasco

1 Preheat oven to 350 F.

2 Stir together salt, pepper, cumin, chili powder and cinnamon, then coat pork with this spice rub.

3 Heat oil in oven-proof heavy skillet over moderately high heat until just beginning to smoke, then brown pork, turning until browned on all sides, about 4 minutes total.  Leave pork in skillet. 

4 Stir together brown sugar, garlic and tabasco and pat on top of each tenderloin. 

5 Roast in middle of oven until thermometer inserted diagonally in centre of tenderloin registers 140 F, or about 20 minutes.

6 Let pork stand in skillet at room temperature for about 10 minutes before carving.

7 Deglaze pan with water and heat to reduce, pour over tenderloins and serve.
