{ Roasted Red Pepper & Feta Appetizer }

Mary writes: "I made this for my father-in-law one weekend and he asks for it every weekend now.  Can also be served with dinner as a salad.  Can be served warm or cold."

Ingredients:

Sheppard Peppers (as many as you want)
Feta Cheese (as much as you want)
Garlic Salt
Vegetable Oil 

1)  Roast Sheppard Peppers on BBQ until completely soft.  Put roasted peppers in a plastic bag for 15 minutes (tie the bag to keep the heat in).

2)  Crumble Feta and set aside.
 
3)  Peel and remove all seeds from peppers and place peeled peppers in a strainer.  Once the peppers have been strained, cut them lengthwise or into bite-sized pieces and place them into your serving dish.

4)  Season to taste with Garlic Salt.  Add crumbled feta.  Add oil (add as much as you would for a salad).  Mix together and serve with french bread slices.
