{ Warm Hug Macaroni and Cheese }
Makes 1-6 servings, depending on how much of a hug you need Source: Cher Morari Just a Thought... Cher writes: "This recipe is an extreme hit with kids and teens. So popular, my oldest daughter asked me to send it in to school to be entered into the fundraiser school family cookbook. I promise that it will become your favourite too. You could substitute the ingredients with all low fat products but then...it would only be a pat on the head!" Ingredients: 4 cups of your favourite uncooked pasta 250 ml cream cheese 4 cups grated sharp/old cheddar cheese 1 cup sour cream 1 cup cream 2 tbsps regular prepared mustard 1/2 tsp nutmeg grated (fresh is best) 1 tsp ground black or white pepper 8 strips of pan fried bacon Topping: 2 slices of whole grain bread finely crumbled 1 cup of grated cheddar 1/2 cup grated parmesan cheese. 1. Combine topping ingredients and set aside. 2. Cut bacon into small pieces and fry. Reserve 1 or 2 tbsps fat. 3. Soften cream cheese and combine with sour cream, mustard, cream, nutmeg, pepper and stir until thoroughly blended. 4. Cook pasta according to usual instructions, drain, then pour the bacon fat over the pasta and toss lightly. 5. Pour all of the creamy mixture onto the pasta and blend gently with the cheddar cheese. 6. Turn pasta mixture into greased casserole then top with the bread crumb mixture. 7. Cover and bake at 300 F for about 45 minutes or until brown and crusty on top. |
