{ Zucchini Bake }

Ingredients

1 pound ground beef
1/4 cup dry bread crumbs
1 teaspoon Italian seasoning
½ teaspoon garlic salt
1 cup sour cream
4 cups (2 large) thinly sliced zucchini
salt and pepper to taste
Parmesan cheese
1 cup (4 ounce) shredded cheese

1. Heat oven to 350 F.  Lightly grease a 1 ½ quart shallow baking dish. 

2. In skillet, brown beef; drain.  Stir in crumbs, Italian seasoning, garlic salt and sour cream.

3. Arrange zucchini in baking dish; sprinkle with salt and pepper.

4. Spoon beef mixture over zucchini.  Sprinkle with Parmesan; cover with shredded cheese. 

5. Bake uncovered 35 to 40 minutes until hot and zucchini is tender. 

4 servings.

MICROWAVE: 

1. Crumble ground beef into 1 quart glass casserole.  Cover and microwave about 5 minutes on HIGH until ground beef is cooked; drain. 

2. Stir in crumbs, Italian seasoning, garlic salt, and sour cream.  Set aside. 

3. Arrange zucchini in 1 ½ quart shallow baking dish.  Cover and cook zucchini 4 minutes on HIGH; drain.  Sprinkle with salt and pepper. 

4. Spoon beef mixture over zucchini.  Sprinkle with Parmesan; cover with shredded cheese. 

5. Cook uncovered 6 to 8 minutes on HIGH until hot and zucchini is tender.
